Breakfast-for-Dinner Burrito Quesadillas

Because breakfast food tastes amazing any time of day! Scramble some eggs with cheese, add them to a tortilla with precooked breakfast sausage (or beans for a veggie version), and cook until crispy on both sides. Serve with salsa and sour cream. It's like a breakfast burrito and quesadilla had a delicious baby!

Ingredients

  • 8 large flour tortillas

  • 8 large eggs

  • 1 cup shredded cheese

  • 8 oz breakfast sausage (or black beans)

  • 2 tablespoons butter

  • Salt and pepper

  • Optional toppings: salsa, sour cream, hot sauce

Equipment Needed

  • Large skillet

  • Bowl for eggs

  • Whisk

  • Spatula

  • Cutting board

Instructions

  1. Cook sausage if using, crumble and set aside.

  2. Whisk eggs with salt and pepper.

  3. Scramble eggs in butter until just set.

  4. Lay out tortillas, add eggs, sausage, cheese to one half.

  5. Fold tortillas, press gently.

  6. Cook in dry skillet until crispy (2-3 minutes per side).

  7. Cut into wedges.

  8. Serve with toppings.

  • Don't overcook eggs - they'll continue cooking in quesadilla

  • Use medium heat to avoid burning tortillas

  • Press down gently while cooking for better seal
