Lazy Day Shakshuka

Don't let the fancy name fool you – this is basically eggs poached in a super flavorful tomato sauce, and it's perfect for breakfast-for-dinner nights! Sauté onions and peppers, add garlic and your favorite marinara sauce, make little wells in the sauce, and crack in some eggs. Cover and simmer until the eggs are set to your liking. The trickiest part is getting the egg timing right, but even if they're a bit over or under, it'll still taste great!

Ingredients
6 large eggs
2 cans (14 oz each) crushed tomatoes
1 large onion, diced
2 bell peppers, diced
4 garlic cloves, minced
2 tablespoons olive oil
1 tablespoon paprika
1 teaspoon cumin
½ teaspoon chili flakes
Salt and pepper to taste
Fresh parsley or cilantro
Crusty bread for serving
Equipment Needed
Large skillet with lid
Sharp knife
Cutting board

Small bowl for cracking eggs
Instructions
Heat oil in large skillet over medium heat.
Add onions and peppers, cook until softened (5-7 minutes).
Add garlic, paprika, cumin, and chili flakes, cook 1 minute.
Pour in crushed tomatoes, simmer 5 minutes.
Make 6 wells in sauce using back of spoon.
Carefully crack eggs into wells.
Cover and cook 5-7 minutes until eggs are set but yolks are still runny.
Garnish with herbs, serve with bread.

Don't stir once eggs are added
