Ingredients:
4-5 lb prime rib roast
1/4 cup kosher salt
2 tbsp black pepper
4 garlic cloves, minced
2 tbsp fresh rosemary
2 tbsp olive oil
Horseradish Cream:
1 cup sour cream
1/4 cup prepared horseradish
2 tbsp chives
Instructions:
Season roast with salt, pepper, garlic, herbs
Let sit at room temperature 2 hours
Preheat oven to 450°F
Sear roast on all sides
Reduce heat to 325°F
Roast 15-20 minutes per pound
Rest 15-20 minutes before slicing
Serve with horseradish cream
